Stuffed Bell Pepper Recipe

INGREDIENTS:


7 Bell peppers

1 lb. of ground beef

2 tablespoons olive oil

1-1 ½ cups cooked rice or steamed riced cauliflower (if you are using the cooked rice, use 1 cup. If you are using riced cauliflower, use 1 1/2 cups)

1 Small white onion - chopped

1 green bell pepper - chopped

2 cloves of garlic - chopped

1- 15 ounce can of tomato sauce

2-3 cups of mozzarella cheese

Salt & pepper to taste


Directions: preheat oven to 325°


Heat a medium size pan with sides (to help with stirring) over medium high heat with 2 tablespoons of olive oil. Then add the ground beef and season with a couple pinches of salt and pepper. Once the meat starts to brown (about 3-4 minutes), add in the onion, bell pepper and garlic and cook for another 3-4 until the onions turn clear. Then add in the riced cauliflower/cooked rice. Let that cook for 2-3 minutes and then taste. Add salt & pepper if needed.


Then turn the heat down to medium low and add in ¾ of the tomato sauce (reserving ¼ cup to top the stuffed peppers) and let simmer. While that is happening, Rinse and dry the bell peppers. Cut off the top, cut them in half, clean out the seeds.


Now, fill with 1-2 tablespoons of filling. Then top with remaining tomato sauce, then mozzarella cheese.


Bake for 15-20 minutes or until the cheese is melted!!!
