Quick and Easy Chicken Fried Rice Recipe

INGREDIENTS:


2 tablespoons canola or vegetable oil

2 tablespoons sesame oil

1 lb boneless/skinless chicken breast - cut into pieces (or you can use boneless/skinless chicken thighs if you want more flavor!!)

1 ½ cup frozen mixed vegetables (yep the bagged stuff)

3 green onions, trimmed and sliced into rounds (optional)

2-3 garlic cloves - minced

3 large eggs beaten

Dash of salt and pepper

4 cups cooked rice (follow the directions on the minute rice box y'all). You can use white or brown rice. You can also use 2 - 8.8 oz. pouches cooked ready-to-serve rice

3-4 tablespoons soy sauce


DIRECTIONS:


In a large non-stick skillet with sides or a wok, add both oils and chicken and cook over medium high heat for about 3-5 minutes. Add some s&p (salt & pepper) Turning every now and then so the chicken gets nice and brown on all sides. Then remove the chicken with a slotted spoon so the yummy juices stay in the pan for the next step!!


Add the vegetables & onions (if you want them) until the veggies begin to soften. Stirring frequently. Add some s&p. If you season as you go, your food will taste great at the end!!!!!


Then add the garlic. Keep it moving. Then make a big hole in the middle of the pan by pushing everything to the sides and add the beaten eggs and cook them to a soft scramble. Add a dash of salt and pepper. The eggs will continue to cook as you add everything back in so you don’t want them too cooked right now.


Add the chicken, rice and drizzle with soy sauce (just lightly - you can always add some more!) Cook 2-3 minutes until everything is well combined. Taste. Add more soy sauce, stir.
