Christmas Molasses Spice Cookies

1 Cup Granulated sugar

¾ Cup Vegetable Oil or Shortening

¼ Cup Molasses

1 egg

2 Cups All-Purpose Flour

2 tsp Baking Soda

1 tsp Ground Ginger

1 tsp Ground Cinnamon

¼ tsp Salt

¼ tsp Dry Mustard

½ Cup Light Brown Sugar or White Granulated Sugar (or more if needed)


Directions:

  1. Preheat oven to 375°. Prepare your baking sheets with either cooking spray or parchment liners.

  2. Combine flour, baking soda, ginger, cinnamon, salt, and mustard in a medium bowl. Stir with a fork to combine and set aside.

  3. Beat granulated sugar and vegetable oil/shortening about 4-5 minutes in a large bowl or stand mixer until light and fluffy. Add molasses and egg; beat until fluffy about another 2 minutes.

  4. Add the dry ingredients mixture to the oil and sugar mixture; beat until just blended together.

  5. Place light brown sugar or white granulated sugar in a shallow bowl for rolling the dough balls. Using a small scoop or spoon, roll dough balls in your palm, then roll in the sugar, then place on the cookie sheet.

  6. Bake for 15 minutes or until lightly browned. Let them cool a few minutes on the cookie sheet.

Makes about 3-4 dozen depending on how big you make the cookies!! :)
