Mexican Cornbread Casserole Recipe


1 Cup Cornmeal

1 Cup Milk

1 Can Cream Style Corn

2 Eggs, Beaten

½ Cup Vegetable Oil

½ Tsp of Baking Soda

1 Pound of Ground Beef, Browned

Salt & Pepper to taste

½ Tsp of Cumin

2 Tsp of Garlic Paste (or 2 Cloves)

½ Pound grated Fiesta Blend Cheese (or your favorite cheese)

½ Large Onion, Chopped


Grease sides and bottom of cast iron dutch oven and heat in oven until hot. This will make the bottom crust crispy.


Mix first 6 ingredients and set aside


Pour ½ batter into pan. Next layer cheese, ground beef, and raw onion - in that order. Pour remaining batter on top. Bake 45 to 50 minutes at 350 degrees.
